Get Your Chocolate Fix with this Diabetic-Friendly Shake

If you have diabetes, dessert can be one of the most challenging parts of a meal. This chocolate shake gets its rich creaminess—and high protein content—from an unexpected ingredient: Light, silken-style tofu. Be sure to use unsweetened cocoa powder, not pre-made hot chocolate mix, which is often laden with sugar.

Rich and Silky Chocolate Milkshakes

8 ounces light, silken-style tofu
2 Tablespoons unsweetened cocoa powder
½ teaspoon vanilla extract
1 cup light or low fat vanilla ice cream
1 cup ice cubes

Serves 2

1. Put the tofu, cocoa powder, and vanilla extract into a blender. Cover and blend until uniform.
2. With the motor running, add the ice cream in small spoonfuls through the opening in the lid. Blend until smooth.
3. With the motor running, add the ice cubes one by one through the opening in the lid. Blend until all the ice has been incorporated.
4. Pour into glasses and serve immediately. Enjoy!
